French Toast Muffins!

We are always looking for new ideas for Muffin Monday's and now we have found a keeper!


1 cup milk
1 egg
1/2 cup butter, melted
3 tsp maple syrup
1 Tbsp vanilla
2 cups flour
1 cup brown sugar
2 tsp baking powder
1 Tbsp Cinnamon

Preheat oven to 375.  Combine the milk, egg, butter,  maple syrup, and vanilla together in a large bowl.  Then mix together the dry ingredients in a separate bowl. Add the dry ingredients to the milk mixture and stir just until combined. Divide the batter into a greased or paper lined 12 cup muffin tin. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to cool for 10 minutes, poke a few holes in the top and drizzle or dip the tops in the following maple glaze. Allow the glaze to set up and Enjoy!


Maple Glaze
1 cup powdered sugar
2 Tbsp butter, melted
1 Tbsp Milk
1/2 Tbsp maple flavoring
Combine all of the ingredients and stir until smooth.
